Elementary pupils from Vancouver-area grade schools experienced a new take Monday on Dr. Seuss’s famous “Green Eggs and Ham” childrens’ book by taking a taste of green scrambled eggs catered by Vancouver’s Beaches Restaurant & Bar.

Beaches restaurant, along with a host of volunteers, dishes up the real version of the fictional meal each year to hundreds of curious (but not always courageous) students at local elementary schools as part of weeklong Read Across America.

The event to promote reading and literacy coincides with the March 2 birthday of author Theodor Seuss Geisel, known as “Dr. Seuss.” He would have been 108 this year.
