Chefs can learn to raise flavor, reduce sodium

Vancouver — Clark County Public Health is offering another free training for chefs and cooks working in Clark County who are interested in reducing sodium in restaurant foods.

The workshop will teach chefs use umami — often called the “fifth taste” — a naturally occurring flavor that is coaxed from foods by certain cooking techniques. The workshop will include demonstrations and tasting using a variety of food sources of umami.

The training is 9 to 11 a.m. Aug. 18 at the Clark College Columbia Tech Center cooking school kitchen, 18700 S.E. Mill Plain Blvd. Register with Melissa Martin at melissa.martin@clark.wa.gov or 360-397-8000 ext. 7291.

The workshop will be led by chef Garrett Berdan, a registered dietitian who teaches nationwide.

Clark County Public Health is paying for the training with a three-year Sodium Reduction in Communities grant from the Centers for Disease Control and Prevention.
