Creamy Wild Rice And Ham Soup
Makes 6 (1 cup) servings
4 tablespoons butter
1/4 cup minced onion
1/4 cup finely chopped celery
1/2 cup all-purpose flour
3 cups reduced-sodium, low-fat chicken broth
1 1/2 cups cooked wild rice
1/3 cup chopped lean ham, visible fat removed
1/2 cup finely chopped carrot
3/4 cup fat-free half-and-half
1/2 cup shredded low-fat cheddar cheese
3 tablespoons dry sherry
Salt and pepper to taste
Melt butter in a medium saucepan over medium-high heat. Add onion and celery and cook, stirring frequently, until onion is softened. Stir in flour; blend well.
