Dan Swansey, who owns Yacolt Mountain Farm with his wife, Caroline, encourages draft horses Bud and Charlie to plow a 4-acre field in late May. The couple run a 25-acre organic and sustainable farm, and are looking to the antiquated method as a way to be kinder to their land.
