Jose “Joe” Red, 65, makes a salad for lunch on Wednesday while taking a break from his job as lead cashier in the Legacy Salmon Creek Medical Center cafeteria. Red was diagnosed with diabetes in August and has since changed his eating habits, swapping hamburgers for the salad bar.
