Nature’s Feast: Walt’s Secret Deer/Elk Meatloaf Recipe

Ingredients:

2 lbs Ground Elk or deer*

1 lb Ground Pork Sausage (mild)

4 slices toasted wheat bread (torn into dime size or smaller pieces)

3 Large Eggs

1/4 cup ketchup

2 tablespoons green taco sauce (the secret ingredient)

1 medium onion (chopped)

1/2 green bell pepper (chopped)

Few Squirts Worcestershire Sauce

Few shakes/twists of black pepper

4 strips bacon

Directions:

Preheat oven to 350 degrees. Set aside chopped green pepper. Mix all other ingredients (except bacon) in a large bowl. Divide mixture into two equal portions. In standard bread pan, form one loaf. Mix green pepper into other portion and form loaf in second bread pan.

Make an “X” with bacon strips on top of each loaf.

Bake for 45 minutes, drain grease and bake for additional 15 minutes. Drain grease again. Let stand for a few minutes. Serve with baked potato and a seasonal vegetable.

*Ground beef may be substituted for all, or some of the game meat.
