Beaches opens takeout stand at Portland airport

Vancouver’s Beaches restaurant opened its first takeout stand last week at Portland International Airport and sales have already exceeded expectations, said owner Mark Matthias.

The completion of the “Beach Shack” is the first phase of a two-phase plan to open a restaurant and takeout bar in the 7,000 square-foot space formerly occupied by Rose City Cafe & Wine Bar at PDX.

Beaches has adapted its traditional sit-down fare for the shack, which offers a “boardwalk menu” of sushi, salads, burgers and fish and chips, all served within three minutes, Matthias said.

The staff also invented some new items such as the Waffalata, a waffle cone filled with scrambled eggs, cheese and sausage, to be sold exclusively at the Shack.

“It tastes just like a pancake sandwich,” Matthias said.

He plans to open the full Beaches restaurant at PDX in about two weeks.
