Letter: Market needs healthy eating options

My mother relocated from the Midwest to Vancouver two years ago. Ever since, I’ve foregone the Portland farmers markets to shop in Vancouver almost every weekend during the season. It is wonderful. I love the music and variety of plants, produce and gift- items.

But why such limited healthy restaurant options? The majority of selections are high calorie and fatty. Surely, with the amazing assortment of healthy food in Vancouver, one or two of them would be interested in opening a booth? I see this as the only drawback — we always want to eat lunch elsewhere. Would a booth offering healthy salads or sandwiches not be a smashing success and more aligned to the true nature of farmers markets?
