Ore. caterer says Willamette Valley foods top menu

CORVALLIS, Ore. (AP) — The head chef at an Oregon catering company says local foods produced in the Willamette Valley are a key ingredient to success.

Kristy Krause told the Gazette-Times in Corvallis there is a growing demand for local foods.

Krause is the head chef and kitchen manager for Valley Catering, based in Adair Village. After working in medical office management, she switched careers and says she finds cooking to be just as nurturing as medicine.

Two of her recipes feature a longtime Oregon agricultural product — hazelnuts. One is a chocolate-hazelnut flourless torte and the other is a hazelnut vinaigrette drizzled on blanched green beans.
