Nature’s Feast: Simple grilled spring Chinook

Simplicity is best when preparing a fish as tasty as a spring Chinook. You do not need to douse this fish with sauces or heavy flavors. Prepare it simply and enjoy its fine flavor.

Ingredients:

One fillet of spring Chinook, sliced from top to bottom into sections about 2 inches wide.

2 tbsp. sea salt

2 tbsp. brown sugar

4 cups water

2 cloves garlic

4 tbsp. unsalted butter

Lemon slices

Directions: The fat content in spring Chinook is so high that you risk flare-ups if you set your fillets directly over the hot coals or flames. To avoid this, pile the coals up when you start them, but don’t spread them out once they are ready. Spread the pieces over the grill in a circle around, but not directly over, the pile of coals.
Start a medium-hot fire in the grill. Combine water, salt and brown sugar. Let fillets soak in the mixture for ½ hour. Remove and rinse.

Finely chop the garlic cloves. Melt the butter and add the garlic to it. Spread the butter on the fish and cook for about 7 to 8 minutes with the skin side up. Flip over and cook another 7 to 8 minutes. Test one fillet for flakiness to see if the fish is done enough, and remove. Serve with lemon slices.
