Students celebrate Dr. Seuss

RIDGEFIELD — Ridgefield students recently ate green eggs and ham for breakfast, cooked by Beaches Restaurant for the annual National Education Association’s Read Across America Day. The restaurant also gave each student a “Cat in the Hat”-style hat. The event started 25 years ago and has grown each year. This year, Beaches served more than 7,000 students and parents across Clark County, according to a news release. Volunteers helped at South Ridge and Union Ridge elementary schools while representatives from local government handed out hats and food. And, of course, “Green Eggs and Ham” was read to celebrate Dr. Seuss’ birthday.
