In case you missed them, here are some of our top stories of the week.

Crews start demolition at Vancouver Red Lion at the Quay

The Red Lion at the Quay is coming down — and no, the fire last month didn’t cause it to come down sooner.

Workers have been slowly demolishing the 62-year-old hotel and restaurant building while deconstructing some of the pieces of lumber and windows to use in other projects. Crews started tearing down the western side of the building with a grappling excavator on Monday, and they’ll continue work, finishing in four to six weeks, according to Mark Newell, project delivery manager at the Port of Vancouver.

BBQ Blessings to open in former Vancouver home of Christine’s Restaurant

The building that housed Christine’s Restaurant for decades will be getting a new life this spring as a new brick-and-mortar home for BBQ Blessings.

For several weekends, the BBQ Blessings truck has been parked at 2626 E. Evergreen Blvd., providing a selection of smoked meats and sides that serve as a partial preview of the all-day menu planned by owners Kris and Jenny England and Greg and Judy Williams.

Comcast joins federal connectivity program

Media giant Comcast recently announced it’d be participating in the federal Affordable Connectivity Program, allowing qualified customers to receive a $30 per month credit that can be applied to any tier of Xfinity’s internet service.

The company also created a new tier of internet service, Internet Essentials Plus, which provides 100 megabits per second download speeds, a cable modem and a wireless internet router for $30 per month. That makes it free once the government credit is applied. The credit could also be applied to customers using Xfinity Mobile.

New auto dealership proposed for Fisher’s Landing area

A new auto dealership may be coming to east Vancouver’s Fisher’s Landing area, according to pre-planning documents submitted to the city of Vancouver by Jason Hannah of Dick Hannah Auto Dealerships.

Dick Hannah currently operates 13 dealerships and two auto body shops, according to its website.

Dutch baby, baked custard delicious ways to use up extra eggs

When you need comfort and you’ve got some extra eggs, here are two recipes that will lift your spirits: a pan-sized puffed pancake known as a “Dutch baby” and baked custard, which my grandmother often made for me if I was feeling a little down or a tad under the weather. This week, because my spirits needed extra lifting, I decided to make both. One recipe turned out great and the other turned out not necessarily as planned but still scrumptious enough for seconds.
