Take it cheesy: Cauliflower Cheese lives up to its name

Cauliflower is the real workhorse of Vegetable Land. Raw cauliflower has a lovely crunch and a hint of nuttiness and I always go for the cauliflower on a vegetable platter, unless there’s snow peas, because snow peas are obviously better than cauliflower. Cooked cauliflower is so tender and has such a mild flavor that it’s a wonderful addition to soups, stews and casseroles.
